16 oz can sweet potatoes, mashed

1 cup raisins |

8 oz crushed pineapple, drained |
Heat oven 325 degrees. Grease and
flour a tube pan. Cream sugar, vegetable oil and
vanilla. Add eggs, beating well. Add mashed
sweet potatoes to creamed mixture, beating until well
mixed. Add flour, cinnamon, baking soda, baking
powder, salt and nutmeg. Mix well. By hand,
fold in pecans, raisins and drained pineapple.
Spoon batter into prepared pan. Bake at 325 degrees
for 60 to 70 minutes |
