Pumpkin Cake

3 cups sugar     ¾ tsp salt
3 cups all-purpose flour     1½ cups vegetable oil
1 TBSP baking powder     3 ¼ cups canned pumpkin
1 TBSP baking soda     4 eggs slightly beaten
1 TBSP ground cinnamon
Preheat oven to 350 degrees. Blend sugar, flour, baking soda, baking powder, cinnamon and salt until well mixed. Add oil and continue to beat until dry ingredients are moistened. Add pumpkin and mix again until well blended. Add slightly beaten eggs and blend 1 minute longer. Bake for 40 minutes
Cream Cheese Frosting
1 lb powdered sugar
8 oz cream cheese
2 tsp vanilla extract
½ cup butter
Mix all ingredients until well blended.

Sweet Potato Cake
2 cups sugar
2 tsp cinnamon
1 cup vegetable oil
2 tsp baking soda
1 ½ tsp vanilla
2 tsp baking powder
5 eggs
1 tsp salt
16 oz can sweet potatoes, mashed
½ tsp nutmeg
3 cups flour
1 cup chopped pecans
1 cup raisins
8 oz crushed pineapple, drained
Heat oven 325 degrees.  Grease and flour a tube pan.  Cream sugar, vegetable oil and vanilla.   Add eggs, beating well.  Add mashed sweet potatoes to creamed mixture, beating until well mixed.  Add flour, cinnamon, baking soda, baking powder, salt and nutmeg.  Mix well.  By hand, fold in pecans, raisins and drained pineapple.  Spoon batter into prepared pan.  Bake at 325 degrees for 60 to 70 minutes
